gluten free strawberry peach danishes

**this recipe uses flour with gluten free wheat starch, which makes it celiac safe, but not safe for those with wheat allergies.

¾ cups butter
2 cups gluten free bread flour with gluten free wheat starch
1 cup gluten free 1:1 flour
½ tsp xanthan gum (omit if your flour blends include xanthan gum)
½ cup sugar
2 tsp salt
½ tsp baking soda
2 tsp flaxseed meal
1 tbsp potato starch
4 tbsp melted butter
2 tbsp active dry yeast
1 ½ cup buttermilk
1 egg + 2 tbsp buttermilk for egg wash
2 ripe peaches
¾ cup strawberry preserves
between 2 sheets of parchment paper, roll 3/4 cups butter into 5"x8" rectangle. place in fridge.
in the bow of a stand mixer with a dough hook attachment, combine flour, salt, baking soda, flaxseed meal, and potato starch.
in a separate bowl, mix buttermilk, sugar, and active dry yeast. set aside until bubbly.
mix melted butter into flour mixture.
with stand mixer on a slow speed, slowly pour buttermilk mixture into dry ingredients. mix until smooth dough forms.
move dough to a floured surface and knead. if the dough sticks to your hands, add flour and continue kneading until it is less sticky.
roll dough out into 10”x12” rectangle.
take butter block out of fridge, place in the middle of the dough, then fold around butter to seal into dough. trim excess dough.
turn dough ¼ turn and roll into 14”x10” rectangle (long end rolls to 14”, short end rolls to 10”)
fold dough into thirds stacked on top of each other (like you would fold a letter to fit into an envelope)
repeat steps 9 and 10 two more times.
wrap dough tightly in plastic wrap. place into fridge for at least an hour, up to overnight.
wash peaches, remove pits, and slice into thin slices.
remove dough from fridge and allow to warm up slightly to soften.
on a floured work surface, roll dough into 12”x24” rectangle.
trim excess to make edges straight.
cut dough into 3”x3” squares.
fold all corners into the center of the dough and make a small indent in each square.
scoop small amount of strawberry preserves into indent, then top with peach slices. place on baking tray.
preheat oven to 400°F while danishes rest.
bake for 20-25 minutes, until golden brown.
transfer to cooling rack and allow to cool.
