gluten free london fog shortbread cookies

cookies
1 cup butter
¾ cup sugar
¼ tsp vanilla extract
2 ½ cups gluten free 1:1 flour
¼ tsp xanthan gum (omit if your flour blend includes xanthan gum)
¼ tsp salt
2 tbsp lavender earl grey tea
glaze
½ cup powdered sugar
2 tbsp heavy cream
¼ tsp vanilla extract
cream together butter and sugar.
mix in vanilla extract.
in a separate bowl, mix together dry ingredients.
⅓ at a time, mix dry ingredients into butter and sugar mixture until combined.
roll dough into 2” thick log. wrap tightly in plastic wrap and place in fridge for around one hour.
preheat oven to 325°F.
remove dough from fridge, unwrap, and slice into ¼” slices.
spread slices onto baking sheet and prick each one with a fork.
bake for 30-35 minutes, until set and starting to brown.
combine glaze ingredients in a small bowl and mix until smooth.
place cookies onto cooling rack and allow to cool completely.
drizzle glaze over tops of cookies and serve.
